Butter, Cream Cheese, and Way Too Much Whey!


Do you have any idea of all the amazing things you can do with fresh raw milk and raw cream?

I do! J

If you leave slightly soured raw milk out on the counter to clabber, you will wind up with the most amazing cream cheese and liquid whey.  (Video Recipe Here)

NOTE:  I had more than a half gallon of soured milk, which made way too much whey!  Um, like a ¼ gallon and a pint’s worth – Oh my lord, what was I thinking?  Sarah, the Healthy Home Economist, warned me, but did I listen? No!

And the cream cheese, you ask?  Well, as the sweet hubby said, “It’s like curds?” Yeah, I need it figure out how to make it smooth…

I made my own butter yesterday with slightly soured raw cream that was super thick and rich.  Triston was amused.  (Video Recipe Here).  Once it got a bit passed whipped cream texture, it was like…

Me: Watch honey, watch it.  It will only be a minute longer.

Me:  Good lord, child.  Just wait!

Drum roll please, we have buttermilk separating from what is now butter!  Voila!  It is pure genius!

How does it taste?  Heavenly!  Triston said, “Oh yeah, oh yeah!  That’s gooood!”
Even the skeptical hubby (who tasted it sans anything else, the weirdo), “Yummy!  Now that I like!”

Well woohoo to me, and I didn’t have to spend hours churning.

I also spent time yesterday drying a ton of fresh organic herbs I got for practically pennies on Thursday at my favorite local place: Olympia Local Foods.  Truly amazing!

Homemade vegetable beef soup with fresh herbs was on the menu for dinner.

All this yummy goodness, even curdy cream cheese, is all GAPS legal fair that everyone can enjoy.  Maybe not Triston just yet, but soon…

Triston is still claiming that he now has the world’s best tummy.  He is still annoying his sister by the second, but I am inclined to believe it is because it annoys her rather than because he is a little too hyperactive.

I am slowly getting this GAPS fair down.  I am off to make pumpkin pancakes to top with that fresh butter – yum!

Now, if only I can get my dissertation finished…
